APPLEWOOD SMOKED PROVOUDA
This is a fabulous variation of our Capella
original, Provouda. No liquid smoke here! It’s smoke-cured
with real apple and hardwood chips. Smoked Provouda has a beautiful
caramel colored outer skin and carries a deep, rich flavor. If you
enjoy smoked cheeses, we think you will love this one!
REGINEUX SWISS
We wondered what a goats milk Swiss would taste like. The result
is a great little twist on the traditional flavor of Swiss. This
cheese is creamy-ivory in color with a subtle lacy texture rather
than large holes or “eyes” found in cow Swiss. These
qualities are due to the composition of the milk. It might look
different but it has that unmistakably nutty, sweet flavor of traditional
Swiss. We recommend adding Regineux Swiss to your favorite sandwich
or recipe to make it even better.
REGAL BLEND
PROVOUDA
Never heard of this? That’s because it’s a Capella original
and we like to call it our Regal Blend. Provouda is an aged, semi-hard
cheese made from raw goats milk. It is mild and versatile combining
the taste and texture of Gouda & Provolone. Perfect in recipes
and delicious all by itself.
KYRIOTES FETA
Feta is a Greek cheese made from goat and sheep milk rather than
cow milk. Most Feta’s you find in stores today are made with
cow’s milk. Our aim was to create something that was as authentic
as possible. Kyriotes Feta is a fresh, mildly tangy, lightly salted
goat milk Feta, packed in whey brine. The only way to get more authentic
Feta is to take a trip to Greece!
CLASSIC CHEVRE
When people think of “Goat Cheese”, our classic Chevre
is what comes to mind. This cheese is made from pasteurized goat
milk. It is soft and spreadable with that wonderful tang. Chevre
is perfect as a spread, mixed in salads, a-top chicken in a main
dish or with a few other ingredients to make one-of-a-kind appetizers
or desserts.
